Gingerbread

1/3 Cup margarine
1/3 cup molasses
2 eggs
1 cup all purpose and whole wheat flour
1 tsp. baking soda
1/2 tsp. baking powder
1tsp.ground cinnamon
1 tsp. ginger
1 tsp. nutmeg
1/2 tsp cloves (crushed)
1Tbsp. orange zest
salt to taste
1/2 cup milk

METHOD:
Preheat oven to 350 degrees. In a bowl cream Margarine add molasses. Mix in eggs one at time – Set aside. In another bowl mix dry ingredients together. Stir into creamed mixture in the other bowl alternating with milk. Lightly grease a 5X 9 inch pan with margarine. Pour batter into pan and bake approx 45 minutes (until toothpick inserted in the center comes out clean). It can be frosted with creamed cheese.
