Irish Soda Bread

1 1/2 cups Buttermilk
1 egg slightly beaten
3 cups all purpose flour
1 Tbsp. double acting Baking Powder
1 tsp. salt
2 Tbsp. melted butter
1 1/2 cups dark seedless raisins
2/3 cups sugar
1 tsp. baking soda

METHOD:
Preheat oven to 350 degrees. Grease 9X5 inch loaf pan. Set aside In a medium bowl, combine buttermilk, egg, and raisins. Set aside In a large bowl combine dry ingredients with 2 forks and toss together for approx 1 minute Add buttermilk mixture and mix together. Spoon into the prepared pan. Bake for 50 minutes. Leave in pan for 1 minute, then turn out on rack to cool.
