Oatcakes

4 oz’s. oatmeal (medium)
1 Tablespoon melted beef drippings, bacon fat or vegetable oil
Salt to taste
2 to 3 Tablespoon boiling water

Method:
Work quickly..the mixture will become difficult to work with if it becomes cold.

Mix all ingredients together and form into a ball.
Sprinkle a little medium oatmeal on a baking board.
Roll out the mixture to form a round approx 1/4 inch thick
Cut into four triangles

Put the oatcakes on a hot griddle and bake on one side only. When the edges curl the oatcake is cooked. Place the Oatcake on a tea-towel or rack and allow to dry off in a warm kitchen (or on a rack in the oven). Oatcakes look like biscuits and are served with cheese, stovies, or with haggis.
