Scottish Biscuits

3 cups Flour
1/4 cup Sugar
2 teasp. Cream of Tartar
1 teasp. Salt
1 teasp. Baking Soda
3 teasp. Baking Powder
3/4 cups Shortening
1 1/4 cups Milk (or a bit less)

METHOD:
Sift dry ingredients, Cut in shortening. Make a well in the centre and add the milk a little at a time. Kneed gently.. Flour a board and rolling pin. Roll dough from center outwards. Do not roll too thin. Cut with a biscuit cutter. Place in a pan leaving a space between biscuits. Brush tops with a little milk or melted butter. Bake in 450 degree oven for approximately 20 minutes or until done.
